BrainiaxMD's Fried Fish

You can't get any more generic than the title. :P



Fried Fish!

I'm forced to admit that this was the first time ever that I've tried doing fish for dinner. That being said, I wasn't really confident in handling the fish, although it pretty much came from the freezer. Up to now, I'm still unsure what type of fish it was (and mom isn't really sure either :P).

To get rid of the "fishy taste" (or lansa in tagalog), I put 4 slices of ginger into the fish. One each underneath the gill covers found on either side of the head. For the other two slices, I had to make incisions at about the midway point of the fish. This proved trickier than I thought, because even though the scales have already been removed, the skin was still tough and unyielding and thus exposed my inexperience. After some effort, I was finally able to put the slices in. Afterwards, I rubbed salt and pepper onto the fish and put it away for the meanwhile whilst I cooked another dish (Bicol express, if you must know :P).

Even though it was my first time dealing with fish, it wasn't my first time frying. I unceremoniously dumped the fish in the hot oil and let it fry, flipping it over after around 5-8 minutes. It was during this time that the folks came home and mom decided to make a sauce to accompany the fish, consisting of soy sauce, flour, rice wine, ground black pepper, garlic powder, and a bit of sugar.She heated this in a saucepan til boiling then put it on the fish. She also added a bit of Taiwan Pechay for garnishing, with the end result seen above. :D

Not too shabby, I have to say, but still not my favorite type of ingredient to work with.

Response to: Philippine College Confidentials

A little while back, I chanced upon the website of Stallion, The Official Publication of Xavier High School. One of the Features articles was entitled "Philippine College Confidentials" Written by a senior (whom I presume to be the section editor), he talks about the "Big Three" universities here in the Philippines (UP, ADMU, DLSU) based on information he gathered from friends studying in the said institutions.

Reading the article kinda struck a nerve since I felt that UST was unfairly excluded. This got me so fired up that I wrote a "comment" which in retrospect seems like it could stand alone as an independent article by itself. It wasn't the kid's fault, since I myself used to consider UST just as an alternative to my personal "BIg Two" (UP and ADMU). Fortunately, I think I made the smarter choice which opened my mind and did me a lot better in the long run. So, here it is in its entirety for your reading pleasure. :D

It is indeed true that most of our graduates end up in these “Big Three” schools, with ADMU and DLSU obviously taking bigger numbers. I’d like to share with you my experiences coming from a “fourth” university. Admittedly not as popular with Xaverians like the three you’ve mentioned, but it is no less in stature as an academic institution. I’m talking about the University of Santo Tomas.

I earned both my pre-med and medical degrees from UST. Situated in the Sampaloc district of Manila, the university is easily accessible via commute as it lies along the path Espana boulevard, one of the main arteries stretching from QC to Manila.

It has a proud and rich history, with the University celebrating it’s quadricentennial (400th) year on 2011.

Now I can’t really give you the lowdown on physical facilities being state of the art or anything, as it’s been quite a while since I graduated, but a lot of infrastructure has been going up during the past few years, with new buildings being erected and brand equipment being brought in. Oh, and there’s also the UST research center, but I digress..

As far as I know, enrollment procedures in UST has been greatly improved to be more efficient that what I encountered before. I won’t expound on specifics since enrollment is just one day every semester and does not necessarily define one’s college life.

I’ll now give a brief rundown on the stuff I feel will be relevant to you guys when you scout around for schools.

UNIFORMS
Yup, read it and weep gentlemen. UST has uniforms for each and every course it has. A far cry from the supposed “freedom” you guys yearn for when you bust out of Xavier, but look on the flipside. Having uniforms mean you won’t be hassled with what to wear to school every day, and won’t be pressured to keep up with fashion trends (although the latter seems to appeal more to the ladies).

COURSES
UST offers a very wide variety of undergraduate courses, like Accountancy, Biology, Business Administration, Education, the different Engineering courses, Legal Management, Physical Therapy, Psychology, Medical Technology, Music, Nursing, Travel Management, just to name a few..

I’ll have to admit that there are some “specialty” courses that UST is better known for (similar what the Computer courses are to DLSU), and that some others are best taken up elsewhere if you can help it. I’m not in a position to talk about all the courses in question, but the pre-med courses are pretty good (especially the pre-professional ones like MedTech or PT). It all boils down to getting the school you prefer that has the course you like.

ENVIRONMENT
UST is nestled in the heart of the busy metropolis. Once inside though, it’s actually quite peaceful and tranquil. It’s also pretty safe, since you’re literally surrounded by four walls with guards monitoring the flow of human traffic streaming through. Although it’s not exactly the huge sprawling campus that characterizes UP or even ADMU, it does not suffer for want of greenery. There are a lot spots to hang out around campus, but I think most people prefer waiting in the classrooms in between classes since most are air-conditioned anyway.

CHANGING CLASSROOMS (?)
In UST, each College/Faculty functions independently of one another, and are housed in their own buildings, which basically contains everything their studentry needs. There’s not much running from building to building here folks. The worst that can happen is that you have to go up to the top floor for laboratory subjects, then rush back down for the next subject’s lecture.

PEOPLE
In my opinion, UST seems to be a kind of “middle ground”, where you have a good mix of people from all walks of life (and not so much of the “crazies”, but that’s just my opinion). This is a far cry from Xavier where most kids are rich, or uber rich. During my time, I’d say most of my classmates were from lower middle class, with a few others coming from either end of the spectrum. The population mix varies from course to course, but generally, it’s a good place to learn how to get along with different kinds of people in a relatively safe environment.

SCHEDULING
No doubt you guys have heard about how in college you’ll be able to fix your class sched as you please. Well in UST, the rules are a little different. For the most part, “Block sections” are implemented, meaning that when you enroll and get assigned to a particular “block” (or section as we’d call it in high school), you’ll be following that particular block’s schedule for the semester. Example: if you’re in 1A-MedTech, you follow your class’ sked and get whatever professors who will be teaching your block’s subjects. In college there were the ones we call “irregulars” who for one reason or another (athletes, guys who failed last sem, etc) must pick their subjects to fix their sched.

FOOD AND ENTERTAINMENT
All around UST you’ll be able to find eateries ranging from your basic carinderia to established fastfood joints like KFC or McDonalds. There are even food options within the campus found within the carpark building fronting the hospital. There’s also a nearby mall (SM San Lazaro) which is a short jeep ride away. For the more adventurous, you could ride the jeep going Taft to hang out at the Robinson’s Place mall there near UP Manila (which, by the way, houses most of their medically-related courses and where some of my XS batchmates took their pre-med).

FLOODING
If there’s one thing UST is infamous for, its probably the flooding. It still does flood OUTSIDE the university from time to time, since the Sampaloc area is basically a converted swampland according to historical records, but the campus itself stays high and dry, occasionally becoming an island amidst the floodwaters when the storms come down really hard. Lately though, there has been much roadwork going on to help alleviate this flooding problem.

Well, that’s my little addendum to your article. Hope this helps you guys in deciding the next step in your education. (Sorry to have made a mini-blog out of this..)

I didn’t include the postgrad stuff( Med school, Law school, Master’s degrees, etc) since that’s an entirely different story altogether. Take things one step at a time.

- It's UAAP Thursday today! Games later: 2pm DLSU vs FEU, 4pm UST vs NU

- Hmm.. it'd be interesting to see how La Salle fares today against FEU, the latter of which I consider the team to beat this season.

- I don't expect the UST game to be a slouch either, as the recently rejuvenated NU recruitment program is beggining to bear fruit.

- Boiling potatoes along with the meat for extended periods not only makes the meat tender, but makes the soup base deliciously thick as well. :D

- Normally I'm not the type that, as they say in the vernacular
, "magbubuhat ng sariling bangko", but here goes.. The Menudo I had for lunch (which I personally cooked) was EXCELLENT!! Urp! :D

- Kaya siguro ako tumataba these past few months.. although I guess I'm also doing this in part to regain all the weight I had lost during my stint as an MROD..

- Stumbled upon an interesting locallly-made Pinoy comic during one of my forays online. Will post an independent entry for it later on.

- Starcraft 2 came out already.. not that I'll be able to afford and play it anyways. :P

- .. it looks pretty cool though, but I don't need yet another computer game to occupy my time that's slowly running out.

- I'll be going back tomorrow to CSMC to pick up my recommendation letters. Thank you to my consultants who have graciously agreed to give me favorable reviews. I promise to do my best to make you proud. :D

UAAP Season 73 1st round ADMU - DLSU

Wow, the first Ateneo-La Salle game of the year! I'm gonna try things a little differently and give a running commentary of things that catch my attention in-game. Let's see what comes out of this.. :P

1st quarter thoughts...

- La Salle is definitely much better this year compared to the crap-ass team they fielded last year.

- Justin Chua has really come into his own. It's frightening to think how he'd play when he reaches his fifth year.


2nd quarter thoughts...

- La Salle's courtside reporter looks like she seriously needs a swig of the Sting energy drink

- .. and that becomes all the more obvious when you pair her up opposite the bubbly Jessica Mendoza.

- This La Salle big man Paredes is a beast! Excellent shotblocking and relentless rebounding! With a little more work, he could evolve into someone like the next Jervy Cruz, but with more blocking power!!

- The guy they picked for the "AXE Man of the Game" does look like he could use a spray or two of AXE

- Bodies flying all over the place! What the hell is happening??

- I like the way Salva attacks the basket. He moves so fluidly and finishes strong.

- Whadaya know? Ugly-ass Monfort gets a 4-point play opportunity!

- Halftime! DLSU 26 - ADMU 30 Low scoring...


3rd quarter thoughts... 

- Simon Atkins with 3 fouls already with barely a minute gone from the 3rd quarter. Not that it'd really make much of a difference anyway.

- Ryan Buenafe is able to give all these great assists. Probably due to the way he furiously attacks the basket, which causes the defenders pay more attention to him since he seems committed to going strong already.

- SAPAL KA!!! What a great block by Justin Chua on Ferdinand!

- What a play!!! (around 7:20 in the 3rd)

- Nice to see Eric Salamat hasn't lost his outside touch. Though his acting stinks! Tossing the ball to the outside as though you were hit hard AFTER you saw there was a no-call? Oh please..

4th quarter thoughts...

- Ano ba yan, nakatulog ang depensa!! (9:40-ish)

- HUUWWWHAATASHOT by Kirk Long!!!!!! (7:50)

- Ok, so the La Salle girl talks a little faster, but still in a totally boring monotone...

- I LOVE the new Penshoppe commercial!

- I'll say it again. Justin Chua has really taken his game to a whole new level!

- With his present hairdo, Ferdinand looks like someone out of an 80s music video

- Wow, ADMU with 100% field goal shooting this quarter! La Salle better do something quick, or Ateneo will definitely run away with this one

- Nice ID lace on Norman Black! :P

- ADMU up 7 (4:23)

- Tsk! Just when Ateneo had its first miss of the quarter, DLSU throws away the possession while still at the backcourt!

- Timeout Ateneo (2:38) while protecting a 5 point lead

- Whoa! Kirk Long fouls out!

- What a STOOOOPID foul by the La Salle roiokie

- MARATA THREEEEEEEEE!! (Last TWO minutes!!!!!!!) Ateneo 63-62

Well, that was fun! Looking back at this, I guess I started out pretty cold, with only two lines during the first quarter. The idea of taking note of the time only struck me during the 3rd quarter. Let's see if we can do better the next time around.

A good game overall, as the score was kept tight almost all throughout. The defense was just CRAZY! And the fact that this was a last-minute come-from-behind win. :D

My Best Friend's Wedding

Yeah, I know its a cheesy,title, but one that says it all. :P

It has been more than three weeks since Reg and Shiela were wed, and I know this entry is waaaay overdue. I guess I'll try to make up for it by writing a worthwhile entry then.

After viewing their on-site video here to jog my memory, I'm now prepared to sit my ass down and churn out a story worthy of the occasion.

Reg told me the good news as early as October last year (I think), and made mention that I had to make a small speech, which I learned was supposed to be a wedding toast. (see related post). Not bad for something made only 3 days before despite already being informed for about half a year. :P

Although I was no stranger to participation in weddings, having been ring-bearer a couple of times and had stints as a veil and cord sponsor, this was the first time I was to become a Best Man. I have to admit that  I had absolutely no idea with what the best man does, as the duties may vary from wedding to wedding depending on the preference of the couple. I guess I did ok though, as the event went with barely a hitch. :D

An added treat to this momentous occasion was that Reg actually made allowances for me and the bro to bring our respective dates! :D

The day started off quite well, with me zooming off to fetch my from girlfriend her home to have her hair and makeup done with mom at the nearby salon. We were a little pressed for time since the wedding would be starting at around 1pm. While waiting for the girls, we ordered delivery to save time. Brother arrived with his own date after a short while. They made it back at the nick of time, barely ate anything, and we were off!

Although the weather seemed to be cooperating despite the rainy season, the heat proved to be a little too much as we were unfortunately crammed into a vehicle with a malfunctioning aircon.. :( Good thing the traffic along EDSA wasn't really that bad at the time, otherwise I think we'd have melted even before we got to the church. Once at the venue, bro and the girls settled down while me and the folks (they were there as godparents) found our places in line... Well, not really. As is typical of weddings, people were milling about every which way. It was a treat to see some of the "brothers" there, all dressed up to see our childhood friend tie the knot. :P

When we were finally lined up, I was told that I was the first in the procession! This kinda took my by surprise as I didn't know the best man walked first. :P Hmm.. I guess that's why he's considered the "best" right? Hahaha I'm funny.. :P

I remember hearing from somewhere that one of the jobs of the Best Man is to help the groom not lose his nerve before the wedding, or something like that. Throughout the entire procession, I was trying my best to ease the tension by chatting Reg up, and for some weird reason, we wound up talking about American Football, out of all things. :P Though It may seem a little weird for anyone who would overhear, for us it was probably just one of those typical nonsensical conversations we've been having since childhood.

At some point we got a little sentimental as I reflected on what was going on and how fast life seemed to have gone by. I believe I said something like "Bro, I can't believe that it was just a few years ago we were just kids, and now here we are with you getting hitched. Thanks for the honor of being your best man." to which he replied "Don't sweat it man, besides, wasn't this our agreement all along?" (We had a deal that we would be each other's best man at our respective weddings) Pardon me for being cheesy, but I was really touched by the remark. . Here was my best bud, my "other brother", the one guy outside my own family I would trust with my own life without any hesitation, honoring a promise made probably more than a dozen years ago. I'll be sure to hold up my end of the bargain when my turn comes. :P

Then it was Shiela's turn to walk down the aisle. She looked so radiant in her wedding gown, and I have never seen Reg so happy in my entire life, and I then knew that all was well. :) At one point I think Reg was at the verge of tears himself, as his bride was already shedding tears of joy the moment she stepped through the church doors. I told him to suck it up, or risk looking silly on his wedding day, immortalized forever in pictures and video. That seemed to have worked, as his face seemed to have remained high and dry all throughout. :P

I have to admit that I didn't really pay much attention to the wedding rites, as I was too busy taking it all in. For all the weddings I've been to, this one struck closest to home. If becoming a first-time ninong for Ced's kid was a wake-up call, this one was like a nuclear explosion. We really weren't kids anymore. This was an entirely different stage of life we found ourselves in. The game had finally changed, as we were slowing slipping into the roles which our parents had once assumed long before. Priorities had indeed changed. Goals and aspirations were being adjusted for the long tern. We used to think we could be young forever, but now here we were, embracing change and rising up to the new challenges that life throws our way.

It was like only yesterday when we were obsessing over computer games, wrestling, collectible cards, cartoons, the NBA, anime, and what-have-you. Man, how things have changed,, Now we're preoccupied with earning a living, taking care of kids, making a profit, upholding the constitution, saving lives, etc..

Anyways, after the church ceremonies, we headed back home for a bit of rest before proceeding to the reception. Before the reception proper, there were cocktails which gave me the chance to hang out with the boys. I thought it was great that mom and dad were there since they knew most of them as well, having seen us grow up together.

They had a photobooth at the event, which made the idle time go buy pretty quickly, In my opinion, the photobooth is the greatest wedding innovation since the wedding cake :P since it allowed guests to have more meaningful and personalized souvenirs of the event, a far cry from the classic figurines that used to be given out. More often than not, the figurines wound up taking up space and gathering dust, eventually being thrown out since they were next to useless after a few months anyway.

When the doors opened, everyone shuffled in while the entourage was asked to stay outside for the entrance. Anyway, I found that I was paired up with the matron of honor (Shiela's BFF) who happened to be a Derma pre-res when I was still a clerk , who eventually became the chief resident, and she was ICAn to boot! :P Now at least I have a Derma referral. ;) (Congrats on passing your diplomate exams Dra. Pam!).

To cut a long story short, our table was a riot, save for a certain someone I won't mention, as he was no fun at all. :P In the middle of the proceedings, we snuck out to have another session with the photobooth. Hehehe. Eventually, my turn at the microphonre came for my "Best Man's toast", and my parents say I did quite well. :P Time really does fly when you're having fun, especially when you're commemorating a very happy event in the company of old friends. ;)

Now my "brother" had gone off and married, and I in turn have gained a new "sister" :D Congratulations and best wishes!! :D

Robinson Crusoe

I chanced upon a copy of the classic "Robinson Crusoe" while browsing the shelves of the local Booksale. Being the curious sort of fellow that I was, and having heard about this book before, I snapped it up (as it was dirt cheap as well anyway).

The book was shelved for about 3 months before I got around to reading it (which based on it's size, would take me only an average of 16 hours or less. :P).

Robinson Crusoe is basically about an Englishman during the colonial era who had the misfortune of being marooned on an island somewhere (as far as I could infer from the book) in Caribbean. It tells of his struggles, his triumphs and mishaps as he lives his solitary existence for around 3 decades. He eventually fins a companion, the famous guy "Friday" and gets off the island to tell his story.

The edition I was able to procure was "complete and unabridged", and as such was written in older English, with some occasional grammatical errors which was probably the norm of the language during those days. I likened reading it to perusing through someones autobiography. The basic plot was in place that he would become a castaway and eventually be rescued, but the chronicle of his day-to-day struggles to survive come across as very spontaneous and random, which adds a little flavor of realism, although some situations documented therein are not outright believable. Often the protagonist would have these long boring ramblings about his revelations in faith during the times when he'd experience a religious epiphany of sorts, although the afterword reminds us that Defoe needed to place these certain elements of religiosity in order to make the book palatable to the audience of his time. Nonetheless, it is an excellent work of fiction and provided me with an entertaining read. I would say that it would serve as a template for "Being Marooned on an Island for DUMMIES". :P

Firestarter


I've been having trouble starting an entry these past few days, most because I'm procrastinating and because I haven't blogged for so long that I need a little push (yet again) to get the ball rolling. I'll admit my language center needs a little exercise.. See the previous post about my Best Man's toast for Reg's wedding? He informed me of that 3 months ago, and I just got around doing it 3 days before the wedding, finishing right on time roughly less than 24 hours before the event itself. :P 

So you see, my mind is in pretty bad shape. Hehehe

Hpefully, this entry will jumpstart an avalanche of entries which I've been dying to post for the longest time.

Toasterriffic!

A few hours ago,, I had the privilege of being the Best Man at my childhood best friend's wedding. Thus I had to make a wedding toast, which I shall blog now. :P

Good Evening Ladies and Gentlemen. On behalf of the bride and groom, I'd like to thank you all for being part of their special day. For those who don't know me, My name is Brian, and I have the honor of being one of Regan's closest friends.

I'd also like to thank their parents,  Mr. and Mrs. Yuliong and Mr. and Mrs. Lim for their generosity, to evryone who worked hard to make all of this possible, to Shiela for being such a lovely and spirited bride, and to Reg for his generosity of spirit, to finally admit that I am the best man. :D

Regan and I go way back, and we were friends as early as Grade 1 or 2. Despite not being classmates in high school, college, and postgrad, we have remained the very best of friends, with him becoming my godbrother somewhere along the way. Despite not seeing each other for months at a time, we still managed to keep in touch and share a laugh or two over the phone as though nothing has changed. Shows you how loyal Reg is, as our friendship had stood the test of time..

When Regan first introduced me to Sheila (I think this was to see a movie in Shang, right?), I immediately saw why Reg fell in love with her. She was friendly, charming, and very pretty as well. As I watched them interact with each other, I could se that Reg was truly happy to be with her, and I had an inkling that he may have found THE ONE..

Their relationship grew and blossomed, until eventually, Regan told me the good news. The rest, as they say, is history.

Now, I'm not one to give any advice on marriage, seeing as I'm not married.. yet, but I'll say this.. Any relationship, especially a marriage, is all about sacrifices and learning. It won't always be fun, but as long as you're willing to compromise for each other and take time to talk and figure each other out, you'll never go wrong.

Now here's the part where I actually propose a toast. So I'd like to request everybody to please stand up and raise their glasses. To Regan and Shiela, may you live a long blessed life together, filled with love and happiness all the days of your lives. Cheers! :D
